An absolute banger! Our first exclusive release of our NB Barrel Aged Rum. Aged for approximately 15 months in a 60 litre ex-Oloroso Sherry Cask. Unfiltered and bottled at full cask strength at 63% abv! Certainly one of a kind and a customer favourite. Limited small batch and each bottle is numbered.
The Production: Our rum begins its journey from scratch with a meticulous 9-day fermentation process, using sugar cane molasses with a distillers yeast, Prometheus and a unique estery yeast, Kveik. It is then distilled in our unique double-retort rum still, ensuring unparalleled flavour and character. Finally, the spirit is aged for 15 months in a 60 litre ex-Oloroso Sherry cask where it develops its rich, complex profile.
TASTING NOTES
The Nose: Rich dried fruits, sugar cane, vanilla and butterscotch.
The Palate: Sweet berry compote, dried fruits with hints of tropical mango.
The Finish: A wonderfully full flavoursome and lingering rich aftertaste.
Try It: Neat or over ice. Use for a very decadent Rum Old Fashioned or Martinez Cocktail. Or, anyway you please!
